This study examines the meaning of Sasak culinary authenticity among business actors in Bilebante Tourism Village and the factors that influence their decisions to maintain or adapt traditional flavors. Based on an interpretive qualitative approach and Giddens' Structuration Theory, this research analyzes the dialectic between individual agency and socio-cultural structures. Data were collected through in-depth interviews, participatory observation, and documentation of local culinary traditions. The research findings show that authenticity in Bilebante cuisine is not a fixed concept, but rather a social construct that continues to evolve through a process of negotiation between Sasak cultural heritage and the demands of the modern tourism market. Business actors reflectively interpret authenticity both as a form of respect for ancestral traditions and as an adaptation strategy to maintain economic and social relevance. Decisions to adapt dishes are influenced by a combination of cultural, financial, and social resource factors possessed by culinary actors. This research reaches the conclusion that culinary authenticity in Bilebante is the result of a dialectic between preservation and change, reflecting the active dynamics of the local community in shaping a culinary identity that is both authentic and adaptive to the development of sustainable tourism.
